Seven years ago, I moved to Norway to begin a new chapter of life. Today, I live on a small island on the west coast, overlooking the fjord and the mountains beyond.
Life here is simple and seasonal. I cook gluten and lactose free meals using ingredients I trust — often locally sourced, sometimes grown in our own garden. From heather honey gathered by bees near our home to beetroot pulled from the soil outside the kitchen door, the food I share reflects the way we truly eat.
